Why Is It Called Popeyes?
Not the cartoon sailor. The chain is named after a hard-nosed detective in a 1971 crime film, and it only got that name after the original restaurant flopped and had to be rebuilt from the recipe up.
The full story is better than the trivia answer, because the name change and the recipe change happened at the same time and for the same reason.
It started as Chicken on the Run, and it did not work
Al Copeland opened his first chicken restaurant in Arabi, Louisiana, just outside New Orleans, in 1972. He was in his late twenties and had come up through the doughnut business, having bought a shop from his brother at 18 with money from selling his car.
The concept was fast fried chicken, served quickly, in direct competition with the chain that already dominated. It did badly almost immediately.
Copeland’s own diagnosis was that the problem was the chicken. He was selling the same mild Southern fried chicken everyone else sold, in a city where that was not what people wanted to eat. So he closed the restaurant, went away and reworked the recipe around spicier New Orleans seasoning, then reopened.
Where the name came from
When the restaurant reopened it needed a new name, and Copeland took one from a film that had come out the year before.
The French Connection was the big crime picture of 1971. Gene Hackman played Detective Jimmy Popeye Doyle, a blunt, relentless New York narcotics cop, and the performance won him an Academy Award. The film won Best Picture.
That is the Popeye in Popeyes. A tough, single minded character from a film Copeland liked, attached to a restaurant that had just gone back and done the job properly.
Why everyone thinks it is the sailor
The confusion is completely understandable. Popeye the Sailor had been a household name in America since the 1930s, and almost nobody outside New Orleans connected the word to a detective in one crime film.
The spelling does not help either. With no apostrophe, Popeyes reads as a plural rather than a possessive, which makes it look less like somebody’s name and more like a brand word. There is a long repeated story that Copeland left the apostrophe out because he could not afford it, which is a good line and should be treated as a story rather than a documented fact.
The name changed four more times
| Year | Name |
|---|---|
| 1972 | Chicken on the Run |
| 1972 | Popeyes Mighty Good Chicken, after the relaunch |
| 1973 | Popeyes Famous Fried Chicken |
| 2004 | Popeyes Chicken and Biscuits |
| 2008 | Popeyes Louisiana Kitchen |
The 2008 change is the one that matters commercially. Dropping chicken from the name was a deliberate move to stop being read as a fried chicken counter and start being read as a regional cuisine, which is what let the chain push biscuits, red beans and rice, shrimp and Cajun sides as part of the offer rather than as afterthoughts. The current lineup is on the Popeyes menu.
What Louisiana Kitchen actually means
It is a positioning statement, not a location claim. The chain is headquartered in Miami and the overwhelming majority of its restaurants are nowhere near Louisiana.
What it signals is the cooking style: New Orleans seasoning, a spicy option as standard rather than as a novelty, and side dishes drawn from Louisiana home cooking. Compare that with the plainer Southern framing on the KFC menu and the difference in the naming is doing real work.
Related Questions
Why is it called Popeyes?
It is named after Detective Jimmy Popeye Doyle, the character Gene Hackman played in the 1971 film The French Connection. Founder Al Copeland chose the name when he relaunched his failing restaurant in 1972. It is not named after Popeye the Sailor, which is the assumption most people make.
Is Popeyes named after Popeye the Sailor Man?
No. The chain’s own history points to the detective from The French Connection, not the cartoon sailor. The mix up is easy to make because the sailor had been famous in America since the 1930s and few people outside New Orleans would have linked the word to a character in a single crime film.
What was Popeyes originally called?
Chicken on the Run. Al Copeland opened it under that name in Arabi, Louisiana in 1972 and it failed quickly. He closed it, reworked the recipe around spicier New Orleans seasoning and reopened it as Popeyes, so the name and the spicy recipe arrived together.
Who founded Popeyes?
Al Copeland, a New Orleans businessman who had come up through the doughnut trade after buying a shop from his brother at the age of 18. He opened the first restaurant in 1972, began franchising in 1976 and built the chain to several hundred locations within about a decade.
Why is there no apostrophe in Popeyes?
The brand has simply always been styled that way. A long repeated anecdote says Copeland left it out because he could not afford it, but that is a story rather than a documented fact. The practical effect is that the word reads as a brand rather than as a person’s name, which adds to the sailor confusion.
What does Louisiana Kitchen mean in the name?
It describes the cooking style rather than where the restaurants are. The company is headquartered in Miami and most locations are nowhere near Louisiana. The phrase signals New Orleans seasoning, spicy as a standard option and Louisiana side dishes, and it replaced Chicken and Biscuits in the name in 2008.
When did Popeyes change its name to Louisiana Kitchen?
In 2008. It was the fifth name the business had carried, after Chicken on the Run, Popeyes Mighty Good Chicken, Popeyes Famous Fried Chicken and Popeyes Chicken and Biscuits. Dropping the word chicken let the chain sell itself as a regional cuisine rather than a single product counter.
