Firehouse Subs Menu Prices at a Glance

Firehouse Subs does one thing no other national sub chain does, and it is the reason the sandwiches taste different from the ones next door. The meat and cheese go through a steamer before they hit the bread. Not toasted on the sub, not warmed on a griddle, steamed hot and then piled on a toasted roll. That is why a Firehouse sub arrives soft and wet in a way a Subway or a Jersey Mike’s does not.

Two brothers who were both firefighters, Chris and Robin Sorensen, opened the first one in Jacksonville, Florida in 1994. The firehouse theme is not decoration bolted onto a sandwich shop. The company has run a public safety charity since 2005 and the pickle bucket by the door is part of it.

Quick answer: A medium Hook and Ladder, the signature sub, is around $9.99 for 720 calories. Subs come in small 4 inch, medium 8 inch and large 12 inch. Every sub comes with a free pickle spear. The medium is better value than two smalls by about three dollars for identical food.

Firehouse Subs Sizes and Which One to Order

This is the part worth reading before you order, because Firehouse prices its three sizes in a way that quietly rewards going up. The small is 4 inches, the medium is 8 and the large is 12. The medium is exactly double the small in both bread and filling, and the large is triple.

Size Length Hook and Ladder Price Calories
Small 4 inch $6.49 360
Medium 8 inch $9.99 720
Large 12 inch $14.29 1,140
The medium is the value size. Two smalls cost $12.98 and give you 720 calories of sandwich. One medium is the same 720 calories for $9.99. That is three dollars saved on identical food. The same holds at the top of the menu, where a large at $14.29 beats a medium plus a small at $16.48 and gives you more sub. If you are feeding two people, one large split is cheaper than two mediums.

Where the small earns its place is as half of a combo, or with a cup of chili, or when you genuinely want a light lunch. At 360 calories a small Hook and Ladder is one of the lighter hot sandwiches on any chain menu.

Firehouse Subs Hot Specialty Subs

This is the core of the menu and where the steamer does the work. Hook and Ladder is the one the chain is known for, smoked turkey breast and Virginia honey ham with Monterey Jack, and it is the sub most people order first and keep ordering.

Hot Specialty Sub Small Medium Large
Hook and Ladder $6.49 $9.99 $14.29
Italian $6.49 $10.49 $14.49
Firehouse Meatball $6.49 $9.99 $14.29
Firehouse Steak and Cheese $6.49 $9.29 $13.49
Engineer $6.49 $10.49 $14.49
Club on a Sub $6.49 $10.49 $15.09
Sweet and Spicy Meatball $6.49 $9.99 $14.29
New York Steamer $6.79 $10.49 $15.09
Turkey Bacon Ranch $6.79 $10.49 $14.49
Spicy Cajun Chicken $6.79 $10.49 $15.09
Firehouse Hero $7.19 $10.99 $15.59
Smokehouse Beef and Cheddar Brisket $7.29 $11.29 $16.59

Calories on the hot subs run from 350 for a small Engineer up to 1,500 for a large Smokehouse Beef and Cheddar Brisket. The lighter end of the specialty list is the Engineer at 350 small and 700 medium, Hook and Ladder at 360 and 720, and New York Steamer at 360 and 730. The heavy end is the brisket, the Italian at 470 small and 930 medium, and anything with meatballs on it.

Hot Sub Calories Small Medium Large
Engineer 350 700 1,120
Hook and Ladder 360 720 1,140
New York Steamer 360 730 1,190
Spicy Cajun Chicken 360 710 1,170
Club on a Sub 380 760 1,350
Firehouse Hero 400 790 1,180
Turkey Bacon Ranch 420 830 1,170
Firehouse Steak and Cheese 420 840 1,400
Smokehouse Beef and Cheddar Brisket 450 890 1,500
Firehouse Meatball 460 830 1,310
Italian 470 930 1,420
Sweet and Spicy Meatball 480 880 1,380

Build Your Own Subs

These are the single meat subs, served the same way with the meat and cheese steamed and your choice of toppings. They run a little cheaper than the specialty list and they are where you go if you want to control exactly what lands on the bread.

Build Your Own Small Medium Large
Veggie $5.99 $8.39 $10.99
Smoked Turkey and Provolone $6.49 $9.99 $13.59
Virginia Honey Ham $6.49 $9.99 $13.59
Roast Beef $6.69 $10.49 $13.99
Pastrami $6.69 $10.49 $13.99
Corned Beef $6.69 $10.49 $13.99
Grilled Chicken Breast $6.69 $10.49 $13.99

The Veggie at $8.39 medium is the cheapest sub on the whole board and at 730 calories for a medium it is not the lightest, because the cheese and the dressing carry most of the number. A medium smoked turkey at 680 is lighter than the veggie and costs $1.60 more.

Ask for it Fully Involved. That is Firehouse language for the full standard topping set, which is mayo, deli mustard, lettuce, tomato, onion and Italian dressing. Saying it by name is faster than listing six things, and if you want the sub plain you say so instead. Sub in a Tub is the other one worth knowing, which gets you the same filling served in a bowl with no bread.

Cold Subs

Two of them, and they are the only things on the menu that skip the steamer entirely.

Cold Sub Small Medium Large
Cold Italian $5.49 $9.49 $13.49
Tuna Salad $6.49 $8.99 $12.49

The tuna is the heaviest sandwich on the menu relative to its size, at 910 calories for a medium and 1,550 for a large, which is more than the brisket. That is the mayonnaise, not the fish.

Snackers

Snackers are half of a large sub sold on its own at a flat price, and they are the cheapest way to eat a real sandwich at Firehouse. The lineup is separate from the main menu and does not overlap with it.

Snacker Price Calories
BLT $5.00 370
Cordon Bleu $5.00 480
Sweet and Spicy Ham $5.00 520
Turkey Jalapeno $5.00 550

At five dollars flat a Snacker undercuts every small on the menu and gives you more food than one, because half of a large is 6 inches against the small’s 4. If you are ordering on price alone, this is the section to read first.

Chopped Salads

The plain Firehouse Salad at 130 calories is the lightest thing on the menu by a wide margin, and adding a protein roughly doubles or triples it while adding $1.60 to the price.

Salad Price Calories
Firehouse Salad, plain $8.39 130
Firehouse Salad with Turkey $9.99 220
Hook and Ladder Salad $9.99 250
Firehouse Salad with Ham $9.99 290
Firehouse Salad with Grilled Chicken $9.99 380
Italian with Grilled Chicken Salad $9.99 410

Those calorie figures are before dressing. Firehouse serves dressing on the side in a packet, and a full packet of ranch or Italian adds 100 to 200 depending on which one, so a Hook and Ladder Salad eaten with everything poured on lands closer to 400 than 250.

Soups and Chili

The soups are worth knowing because they are the only hot item on the menu that is not a sandwich, and a cup with a Snacker is a full lunch for around nine dollars.

Soup Cup Bowl Calories, cup to bowl
Chicken and Dumpling Soup $3.99 $5.19 120 to 190
Firehouse Chili $3.99 $5.19 180 to 300
Loaded Potato Soup $3.99 $5.19 240 to 380

Soup rotation varies by restaurant and by season, so not every location carries all three on the same day. The chicken and dumpling at 120 calories a cup is the lightest hot item Firehouse sells.

Sides

Side Price Calories
Chips $1.99 130 to 260
Garlic Bread $1.99 420
Cajun French Fries, medium $2.99 550
French Fries, small $3.99 420
Mac and Cheese $4.49 380
French Fries, medium $4.99 500
Side Salad $4.99 60
French Fries, large $5.49 590

Fries are not at every Firehouse. They rolled out across the chain rather than launching everywhere at once, so a location that has been open a long time may still not have a fryer. Call ahead if the fries are the reason you are going.

Kids Combos

Every kids combo is the same price and includes the sub, a side and a drink. All four are steamed the same way as the adult subs.

Kids Combo Price Calories, sub only
Hot Turkey $6.99 220
Hot Ham $6.99 260
Hot Meatball $6.99 360
Grilled Cheese $6.99 465

Desserts

Cookies and brownies, baked in store, and the bundles are the only real discount on the menu that applies without an app.

Dessert Price Calories
Celebration Sugar Cookie $1.49 320
Double Chocolate Cookie $1.69 240
Oatmeal Raisin Cookie $1.69 290
Chocolate Chip Cookie $1.69 310
Brownie $1.99 430
Dessert Bundle, 3 piece $4.99 870
Dessert Bundle, 6 piece $9.99 1,740
Dessert Bundle, 12 piece $14.99 3,480

The 12 piece bundle at $14.99 works out to $1.25 each against $1.69 bought singly, and the 6 piece at $9.99 is barely a discount at all. If you are buying more than three, skip straight to the twelve.

Drinks

Most Firehouse restaurants run a Coca-Cola Freestyle machine with free refills in the dining room, and bottles and cans sit in a cooler by the register.

Drink Price Calories
Canned Soda $1.99 0 to 140
Powerade $2.29 to $2.39 130
Bottled Water $2.39 0
Cherry Lime-Aid $2.59 330
Bottled Soda $2.59 to $2.99 0 to 290
Fountain Drink $2.79 0 to 600
Strawberry Guava Lemonade $2.79 280
Classic Lemonade $2.89 350

Cherry Lime-Aid is the house drink and it does not exist at the other sub chains. It is also 330 calories in a single cup, which is more than a small Hook and Ladder.

Catering

Firehouse catering is built around two shapes, the platter for a table and the box lunch for one person. Both need ordering in advance and both are priced by the restaurant rather than nationally, so treat the figures below as a working band.

Catering Item Approx Price Serves
Rookie Box Lunch $13.09 1 person, small sub with side and cookie
Lieutenant Box Lunch $13.99 1 person, medium sub with side and cookie
Half Platter $51.59 to $69.99 About 5 people
Classic Salad Platter $60.99 to $65.99 About 10 people
Full Platter $79.99 to $84.99 About 10 people
Cookie Platter $34.99 24 pieces
Gallon of Tea or Lemonade $8.99 About 16 cups

Box lunches are the ones people underrate. A Lieutenant box at $13.99 is a medium sub, a side and a cookie, which is roughly what the same three items cost bought separately, except it arrives labeled with a name on it. For an office order where people want different subs, that labelling is the entire value.

The Hot Sauce Shelf

Every Firehouse has a rack of hot sauces by the drinks and it is not a gimmick shelf of the same three national brands. The one to look for is Captain Sorensen’s Datil Pepper Hot Sauce, made with the datil pepper, which grows almost nowhere in the United States except around St. Augustine, Florida. It is sweeter and fruitier than a habanero at similar heat, and most people have never had one.

Bottles are for sale to take home alongside the open ones for use in the restaurant, and the shelf usually carries a mix of the house sauces and outside brands. Ask for a datil on a Spicy Cajun Chicken or a Firehouse Steak and Cheese rather than on something already sweet.

The Firehouse Subs Public Safety Foundation

This is the part of the brand that is not marketing. The Firehouse Subs Public Safety Foundation has been running since 2005 and it buys equipment for fire departments, police departments and emergency services, funds prevention education and scholarships, and pays for disaster relief.

It is funded three ways inside the restaurant. You can round your order up to the next dollar at the register, drop change in the box, or buy one of the empty five gallon pickle buckets by the door for a $4 donation. The buckets are the ones the pickles arrived in, which is why they smell like pickles for a month, and people use them for everything from garden storage to camping. The foundation states that 90 cents of every dollar donated goes directly to its programs.

Worth knowing. The round up at the register is optional and the cashier will ask. If you would rather not, saying no is normal and nobody at Firehouse minds. If you would rather give more, the pickle bucket is the one that gets used.

Why Firehouse Subs Costs More on Delivery Apps

If you compare the prices on this page against what you see in DoorDash or Uber Eats, the app will be higher by a meaningful margin, often a dollar fifty to two dollars on a medium sub. A medium Hook and Ladder that is $9.99 on the counter menu commonly shows around $11.60 in an app before fees.

That gap is deliberate and it is not the delivery fee. Restaurants raise menu prices inside delivery apps to cover the commission the app charges them, and the delivery fee, service fee and tip all sit on top of the raised price. The figures on this page are in restaurant figures. If you are within walking distance, ordering ahead in the Firehouse app and collecting it yourself is the cheapest way to buy the same sandwich.

How to Order at Firehouse Subs for Less

Start with the Snackers at five dollars flat, because half a large is more sandwich than a small and costs less. If you want a full sub, take the medium rather than two smalls, and split a large between two people rather than buying two mediums.

Join Firehouse Rewards before you order rather than after. It runs on points per dollar and it sends a free medium sub on your birthday, and signing up usually comes with an offer on the first order. Ask for your sub Fully Involved so the toppings are free rather than added one at a time, and take the pickle spear, which comes with every sub at no charge whether or not anyone mentions it.

If you are ordering for more than four people, price a half platter against individual subs before you decide. Around five people the platter usually wins, below that it usually does not.

Firehouse Subs Nutrition Notes

The steamer is the reason a Firehouse sub often reads lighter than it eats. Steaming needs no oil, so the meat itself carries no added fat, and a small Hook and Ladder at 360 calories or a medium at 720 is reasonable for a hot sandwich of that size. What moves the number is the cheese, the mayonnaise and the dressing, all of which go on after the steamer. Our calorie calculator shows how a sub and its toppings fit into your daily needs.

The genuinely light orders are easy to find. A plain Firehouse Salad is 130 calories, a side salad is 60, a cup of chicken and dumpling soup is 120, a small smoked turkey sub is 340 and a small Engineer is 350. The heavy end is the large tuna at 1,550, the large Smokehouse Beef and Cheddar Brisket at 1,500 and the large Cold Italian at 1,450. On sodium, the cured meats carry the most, so pastrami, corned beef, the Italian and the ham subs sit well above grilled chicken or turkey.

Firehouse Subs Menu FAQ

Why does Firehouse Subs steam its meat?

Steaming heats the meat and cheese through without oil and without drying them out, and it is the single thing that makes a Firehouse sub taste different from a Subway or a Jersey Mike’s. The steamed filling goes onto a toasted roll, which is why the sandwich arrives hot and soft rather than crisp. It also means the meat itself carries no added fat from cooking.

What are the Firehouse Subs sizes?

Small is 4 inches, medium is 8 inches and large is 12 inches. The medium is exactly double the small and the large is triple. A medium Hook and Ladder is around $9.99 for 720 calories, with the small at $6.49 and the large at $14.29.

Is the medium or the small better value at Firehouse Subs?

The medium, clearly. Two smalls cost $12.98 and give you 720 calories of sandwich, while one medium is the same 720 calories for $9.99. That is three dollars saved on identical food. The same logic runs up the menu, so one large split between two people beats two mediums.

What is a Hook and Ladder at Firehouse Subs?

The chain’s signature sub, smoked turkey breast and Virginia honey ham with Monterey Jack cheese, steamed and served on a toasted roll. It is 360 calories in a small, 720 in a medium and 1,140 in a large, and it is one of the lighter specialty subs on the board.

What does Fully Involved mean at Firehouse Subs?

It is Firehouse’s own term for the full standard topping set, which is mayo, deli mustard, lettuce, tomato, onion and Italian dressing. The toppings are included in the sub price, so asking for it Fully Involved is faster than naming six things and costs nothing extra. Sub in a Tub is the related one, which serves the same filling in a bowl with no bread.

What is the Firehouse Subs pickle bucket?

The empty five gallon buckets the pickles arrive in, sold by the door for a $4 donation to the Firehouse Subs Public Safety Foundation. People use them for garden storage, tools, camping and cleaning. The foundation buys equipment for fire and police departments and emergency services, and states that 90 cents of every dollar donated goes to its programs.

Does Firehouse Subs have gluten free bread?

Many locations carry a gluten sensitive roll, and Sub in a Tub serves any sub without bread at all. Neither is prepared in a dedicated gluten free area, and the same prep surfaces, utensils and steamer handle regular rolls all day, so cross contact is likely. It is not safe for celiac disease. Ask your restaurant what they stock, because the roll is not carried everywhere.

What is the healthiest thing at Firehouse Subs?

A plain Firehouse Salad is 130 calories and a side salad is 60. A cup of chicken and dumpling soup is 120. On the sub side, a small smoked turkey is 340, a small Engineer is 350 and a small Hook and Ladder is 360. Salad calories are before dressing, and a full packet adds 100 to 200.

Why is Firehouse Subs more expensive on DoorDash and Uber Eats?

Restaurants raise their menu prices inside delivery apps to cover the commission the app charges, so a medium sub that is $9.99 at the counter commonly shows around $11.60 in an app before any fees. The delivery fee, service fee and tip then sit on top of that raised price. Ordering ahead in the Firehouse app and collecting it yourself buys the same sandwich at the counter price.

What is Captain Sorensen’s Datil Pepper hot sauce?

Firehouse’s house hot sauce, made with the datil pepper, which grows almost nowhere in the United States outside the area around St. Augustine, Florida. It sits at roughly habanero heat but tastes sweeter and fruitier. Bottles are sold at the counter and open ones sit on the hot sauce shelf for use in the restaurant.

Price disclaimer. USA Food Menu is an independent reference site and is not affiliated with Firehouse Restaurant Group. Firehouse Subs restaurants are largely franchised and operators set their own prices, so figures here were checked across several states in 2026 and reflect in restaurant ordering rather than delivery app pricing, which runs higher. Limited time subs rotate through the year and are not listed above. Fries, soup varieties and the gluten sensitive roll are not stocked at every location, so confirm with your restaurant before going.
